Chef Allan Alquisalas Jr. is the Chef de Cuisine at Ka‘ana Kitchen, the signature restaurant at Andaz Maui at Wailea Resort, where he brings over 14 years of culinary experience and a deep connection to Hawai‘i’s food culture. A native of Kaua‘i, Chef Allan’s journey has taken him through some of the most respected kitchens in the Hyatt portfolio, including leadership roles at Grand Hyatt Kaua‘i, Koloa Landing Resort, and most recently as Banquet Chef at Hyatt Regency Waikiki.

Chef Allan’s cooking philosophy is rooted in creating dishes that “bring comfort to the soul,” inspired by local Hawaiian ingredients and traditional recipes reimagined with modern flair. His culinary style reflects both his heritage and the diverse flavors of the islands, blending innovation with authenticity.

His career highlights include a culinary collaboration in Fukuoka, Japan through a partnership with Hawaiian Airlines, and competing in Hyatt’s Good Taste Series in 2024—a global competition celebrating the creativity and skill of emerging Hyatt chefs.

At Ka‘ana Kitchen, Chef Allan works alongside Executive Chef Ritchard Cariaga and Executive Sous Chef Chance Savell to shape the restaurant’s next chapter. Together, they lead a culinary team dedicated to farm-to-table dining, seasonal menus, and immersive guest experiences such as the nightly Chef’s Table and a robust dry-aging program featuring prime cuts and fresh island seafood.
